Creamy Macaroni and Cheese.

If you love those fancy recipes for macaroni and cheese with toasted bread crumbs on top and five kinds of cheese, this recipe may not be for you!

However, if you love good ole’ macaroni and cheese that’s loaded with so much gooey cheddar cheese that it couldn’t hold one more ounce, then this is the recipe for you!

I’ve been making macaroni and cheese for over 40 years and for the last decade or so this has been my go-to recipe.  My family, especially my grandchildren insist on this recipe for every occasion, and they won’t accept any other mac and cheese.

This is a super easy recipe and you can prep it the day before and simply bake it the day of.  It’s a great holiday recipe when you’re busy doing so many things in the kitchen.

Ingredients for creamy Mac & Cheese

  • 2 cups uncooked macaroni
  • 3 eggs beaten
  • 1/2 stick cold butter, cut into small pieces
  • 1/2 cup sour cream
  • 2 1/2 cups finely shredded sharp cheddar cheese
  • 1 can Campbell’s condensed cheddar cheese soup
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup 2 percent milk

Easy recipe steps…

  1. Cook the macaroni in a pan of boiling water until tender and drain.
  2. Add the butter and 2 cups of the cheese to the macaroni and gently mix until the butter and cheese melt.
  3. Add the eggs, sour cream, pepper, salt, milk, and soup and gently mix until all ingredients are combined.
  4. Pour mixture into the buttered baking dish and sprinkle the top with the 1/2 cup of cheese.
  5. Cover with foil and bake for approximately 40 minutes until it is hot and bubbly.

Tips…

  • Cook the macaroni and assemble the recipe the day before.  Set it out of the refrigerator at least one hour before baking.
  • Make sure to cover the macaroni and cheese with foil before baking.  Otherwise, the cheese will dry out and become crunchy on top.

Units Scale
  • 2 cups uncooked macaroni
  • 3 eggs beaten
  • 1/2 stick (1/4 cup) cold butter, cut into small pieces
  • 1/2 cup sour cream
  • 2 1/2 cups finely shredded sharp cheddar cheese, divided
  • 1 can Campbell’s condensed cheddar cheese soup
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup 2 percent milk

Instructions

  1. Preheat oven to 350 degrees.
  2. Butter the bottom and sides of a 9″ x 13″ baking dish.
  3. Cook the macaroni in a pan of boiling water until tender and drain.
  4. Add the butter and 2 cups of the cheese to the macaroni and gently mix until the butter and cheese melt.
  5. Add the eggs, sour cream, pepper, salt, milk, and soup and gently mix until all ingredients are combined.
  6. Pour mixture into the buttered baking dish and sprinkle the top with the remaining 1/2 cup of cheese.
  7. Cover with foil and bake for approximately 40 minutes until it is hot and bubbly.

Notes

  • The macaroni and cheese can be prepared in the baking dish, refrigerated and baked the following day. If you refrigerate it over night, set it out of the refrigerator for at least one hour before baking, or the cheese on top will brown too much before the macaroni and cheese get heated through.
