Marshmallow Buttercream Frosting

I’ve been wanting to post some of my favorite frosting recipes for a while now, but I always seem to put other recipes first.  This week I offered to help my friend Julie with her daughter’s wedding shower by making some cupcakes.  The shower is a few weeks away, but I thought Julie might want to taste test a couple different frosting recipes and choose her favorite.  This gave me the excuse I needed to find the time to make some frosting. I thought I’d start with this recipe for Marshmallow Buttercream Frosting,  It’s an excellent frosting recipe that my sister passed on to me and it pipes and holds up beautifully.  It’s like making your favorite buttercream frosting and taking it up a notch.  Marshmallow Creme adds fluff to the buttercream but does not take away from the butter flavor.  It’s so quick and easy to make and so delicious.

Here’s how I whipped up this quick and easy frosting…

I added some real butter and Marshmallow Creme to the bowl of my stand mixer…

And I used the whisk attachment to whisk it into a creamy mixture…

Then I added some pure vanilla and powdered sugar…

And mixed everything together, starting on low speed for a few seconds to incorporate the sugar, then on medium speed for about a minute until the mixture was very light and fluffy…

Then I used my favorite Wilton tip #1M and filled a pastry bag with the buttercream…

And decorated some cupcakes…

This frosting is so quick and easy to make, so delicious, creamy and fluffy.  It looks beautiful on cupcakes and cakes.

Make some today and enjoy!
