Rice Krispie Treat S’mores

Are you ready for another quick and easy 10 minute snack?  In the midst of making all of my desserts for an Independence Day family get together, I was trying to think of something that would cater to the little ones in my life.  I stumbled upon this recipe from my local Kroger mailer, and decided to adapt it to my own liking.  Not only were these Rice Krispie S’mores a big hit with my grandchildren, they were a hit with the adults as well.

Here’s how I whipped them up…

Ricekrispietreats'mores - 1First, I crumbled up some graham crackers into coarse crumbs…(I used my rolling-pin)…

Next I melted some butter in a large pan…

Then I tossed in some miniature marshmallows…

And stirred the mixture constantly over medium heat until the marshmallows were melted…

I removed the pan from the heat and added some pure vanilla extract and blended it in…

Next I added some Rice Krispies and my crumbled up graham crackers…

I mixed the Rice Krispies and the graham cracker crumbs in and tossed in some additional marshmallows…

I mixed the marshmallows into the Rice Krispie mixture…

Then I dumped the mixture into a 9 x 13″ pan, (you can use a 9 x 9″ pan if you want really thick ones)…

And I spread it out using a piece of buttered, folded wax paper, but you can use a buttered spatula as well…

Next I sprinkled more marshmallows on top, along with some semi sweet chocolate chips…

And I placed them under my oven broiler for about one minute, and never took my eyes off of them while they were under the broiler.  After the marshmallows became brown and toasted on top, I removed the pan from the oven…

Voila!!  Rice Krispie S’mores…

Rice Krispie S’mores

Crispy, buttery treats with slightly melted chocolate chips, graham cracker crumbs and toasted marshmallows. YUM!


  • 1/2 stick real butter
  • 1 bag miniature marshmallows, 10 ounce
  • 1 teaspoon real vanilla extract
  • 5 cups Rice Krispie cereal
  • 1 cup crumbled graham crackers
  • 2 cups miniature marshmallows, divided
  • 1/3 cup semi sweet chocolate morsels


  1. Melt the butter in a large saucepan over medium heat. Add the bag of marshmallows and stir constantly until the marshmallows have melted. Remove from heat.
  2. Add the vanilla and mix to blend in. Add the cereal and graham cracker crumbs and mix well. Add one cup of the marshmallows and mix into the cereal mixture.
  3. Spread the mixture into a 9 x 13 inch pan. Sprinkle the remaining cup of marshmallows over the top of the mixture, followed by the chocolate chips.
  4. Place the pan under the broiler of an oven and broil for one to two minutes, until the marshmallows are brown and toasted on top. Immediately remove from oven.
  5. Let cool and cut into squares and serve.


  • When crumbling the graham crackers, the crumbled pieces should be no bigger than the size of the cereal. I used my rolling pin and mine was a mixture of fine and coarse crumbs.
